Salad roll ups. Awesome for lunch and snacks. Use a variety of greens, apples for crunch, balsamic for sweet, omnivore salt for seasoning, turkey for protein, whipped cream cheese for fat - can drizzle some olive oil too.

Spread out a lavash, layer with whipped creamed cheese, add layers of veggies, and roll up!

Eggplant is in season! This was a simple recipe that can be a side or a main. Garlic Parmesan Baked Eggplant by Crunchy Creamy Sweet.

I pulsed some leftover @rize_up_sourdough to make bread crumbs and, of course, used extra virgin instead of melted butter.

Preheat oven to 400. Slice eggplant in 1/2 inch rounds, salt and set aside for 30 minutes.

Mix 1 cup bread crumbs with 1 tsp Italian seasoning (or any of your favorite flavors) with 1/4 cup Parmesan in one bowl.

Line a baking sheet with parchment paper.

Slather olive oil on both sides of the eggplant rounds and coat with bread crumb mixture. Place on the baking sheet.

Bake for 15 minutes on each side. Top with fresh herbs (parsley and cilantro works) and a dollop of thick Greek yogurt.
