Herb hack of the day. Take those leftover herbs, chop them up and put into ice cube trays. Fill the tray with water and freeze. Pull a cube when you need some herbs for soups, pastas, anything!

Stuffed squash ... got some great suggestions for making something delicious out of a curvy vegetable.
Lesson #1: all squash can be halved, cleaned, patted with olive oil and baked. (Thx @vineetbuch)For about 45 min at 350.

Lesson#2: leftovers make excellent filling and helps to reduce food waste

Lesson#3: cheese on anything tastes great!

So, after the squash has cooked (if a fork slides easily into the squash, it’s done. I heated up the leftovers (black beans, roasted veg, quinoa and a bit of rice, and shrimp... think burrito bowl thx @theforestfeast), I filled the squash, topped with feta and baked for 5 more minutes at 375 to melt / char the cheese.

lesson #4: never be intimidated by squash again!

Kinda proud of our frig. It’s organized! How’s yours looking?

An organized frig helps to 1) reduce food waste 2) bc we’ve prepped food and 3) organized it so we know what’s inside. No lurking leftovers with hairy mold to discover later.

Top shelf: leftovers and prepped food
Second shelf: bulk veg and dairy
Third shelf: meats and packaged misc
Crispers: fresh veg
No judgement. And, no, it doesn’t always look like this!

Love salty crunchy chips but looking for a healthier snack? We love making kale chips.
Don’t even need to cut the spines out. Set oven at 425, toss kale in olive oil, add pinch of sea salt. I added some fresh squeezed lemon which we loved.
Roast for 20 min. Checking in at 10 min.
Could also grate some Parma after it’s roasted.

Use any leftovers to garnish pasta, eggs, whatever you fancy.

But we ate them all! Usually do 🤗

Eat good food to boost your immune system. Ok. Not the prettiest photo (I like the halo:) but so delicious and nutritious: grilled salmon over creamy Parmesan polenta, roasted asparagus, and avocado.

The hacks: marinade for salmon (doubled as dressing for the avocado) just 1 Tbs of soy sauce, 1 Tabs of honey ginger white balsamic, and 2 TBs of extra virgin).
Asparagus- key is to NOT overcook. Just takes 5 minutes at 425. Before oven, toss is extra virgin and sea salt, and lemon zest; after roasting squeeze fresh lemon juice. Yum!

Supporting our local farmers and farmers’ markets helps support our own health and well-being during COVID-19. Especially now, we need to eat more nutrient-dense food to maintain our health. Sautéed veggies in olive oil is the easiest way to keep our immune systems strong.

Another fallout of the shelter-in-place mandate is that many of these farmers have lost restaurant accounts so they need our support more than ever.

Noe Valley’s Market was bustling even w the new distancing guidelines in place. Stay healthy. Be well!
