The difference between a filtered and an unfiltere

The difference between a filtered and an unfiltered olive oil.

Unfiltered oil has some sediment in the oil from the pits, skins, flesh of the olives. Typically, an unfiltered oil needs to sit or rack for a few months so that sediment settles out of the oil leaving a cleaner oil that is more shelf stable.

The filtered oil goes through one more process after milling, the filter, which is a series of cotton sheets that trap that sediment rendering a clean oil that will be shelf stable immediately. No need to rack.

Some prefer filtered oil and others unfiltered.

I like it both ways!

Cookies last night and salad tonight! It’s called balance 😅 It’s fig season and my neighbor’s mom has a tree and I got some - yay! Nice neighbors!!

So salad dressing is a simple mix of evoo and fig balsamic with some s&p. That’s it! Mixed greens, fresh figs for sweet, and blue cheese crumble for tang. I added a hard boiled egg for a bit of protein.
