This is a winner for dinner! 30 min tops to make.

Baked shrimp and feta in a tomato sauce. Sop up the juices with rice or grilled bread … like our @rize_up_sourdough that’s delivered on Wed, Fri, Sat, Sun.

Recipe:
1.5 lbs Jumbo shrimp (frozen is fine)
24 oz tomato sauce
2 tbs olive oil
1/2 cup onion
3 cloves garlic
Feta
Oregano

Ideally use a cast iron pan or other pan you can put in the oven.
Preheat to 425.

Chop onion and sauté in olive oil for 5 min. Add garlic 30 seconds.

Add sauce. Add shrimp. Sprinkle feta on top.

Add fresh oregano and another tbs of olive oil on top.

Put in oven (lower 1/3 of oven) for 15-20 min.

Serve with rice or grill some bread. Add a simple green salad with your favorite vinaigrette (ours is a simple combo of extra virgin, dash of white balsamic and champagne mimosa. Salt and pepper) ratio oil to vinegar is 3:1.

Sit at the table together and Enjoy!

I adapted Hetal’s recipe @milkandcardamom and used baby kale instead of spinach and yogurt / ricotta instead of sour cream. It’s delicious!

Good morning!! Just made my first batch of oatmeal from @haydenflourmills . Ah-MA-zing.

No, really. Toasty, dense, substantial. Different than your run of the mill (pun intended) oats and grains. Top with fresh fruit and nuts. And a splash of raspberry balsamic!

Not all four and grains are the same (my same sermon about extra virgin!) and we all know about poor gut health these days. So get excellent fiber and nutrition from hand cultivated, heritage grains from Hayden.

Now in stock: cracked oats, bread flour, all purpose flour, polenta, and crackers!

Sunday morning frittata. Made for two. What’s so great about a frittata is that you can use any veg you have … asparagus, broccoli, peas, mushrooms, red bell peppers… And can add or not bacon or sausage. And cheese, choose your favorite. I added feta because we like the tang. Leftovers make a great snack.

Preheat over to 350.

Sautée the veg in a tbs of olive oil but don’t overcook. Add garlic if you like.

In a bowl, crack 6 - 8 eggs, add 1/4 cup milk (ok to use almond or oat). Season w salt and pepper. Mix well.

In a greased 9x13 glass dish, layer veg, add egg mixture and top with cheese.

Bake for 20-25 min. Let set for 5 when done. Serve with avocado slices and some micro greens (get your Hamama grow kits at OTOT)

Mimosa optional.
