You will need:
1 fresh corn cob
1⁄2 cup red bell pepper (diced)
1 tsp cup onion (diced)
1 tsp lime or lemon juice
Pinch black pepper
Salt to taste
1⁄4 loose cup cilantro (rough chop) optional
Slice the corn off the cob into a mixing bowl. Combine bell pepper, onion, juice and cilantro. Add pepper and toss together.
