Shrimp scampiLately we’ve been celebrating tomatoes, our plant is going wild with chocolate cherry tomatoes—so sweet and delicious! Tossed in olive oil, white wine, garlic, sprinkle a little fresh grated parmesan overtop. Pasta Mama has the perfect pasta for this recipe–you can’t go wrong with their lemon garlic although garlic basil or rosemary thyme would work great too! Così delizioso!


1 lb cleaned and deveined shrimp

3 cloves of garlic

½ cup chopped onion

1 cup cherry tomatoes

1 cup fresh spinach

1 tbs OTOT extra virgin olive oil

White wine


In a saute pan, heat olive oil, add garlic & diced onion. Saute on medium heat until tender, add cherry tomatoes and washed fresh spinach. Add a half a cup of white wine, saute together about 10-12 minutes then add rinsed shrimp. Cook for another 8-10 minutes rotating shrimp while stirring. The shrimp will become less translucent and begin to become white, with orange rims. Boil pasta and drain. Toss pasta into shrimp mixture and serve with shaved parmesan.
