Easy Falafel Hack Recipe using Trader’s Joes Falafel Mix
We have recently discovered the joy of Trader Joe’s falafel mix! Our OTOT recipe hack expands from a basic falafel ball to a delicious treat for any time of day! The mix calls for 1 cup of mix and 1 cup of water and that’s it! For the OTOT version, we suggest the following:
- 1 cup TJ’s Falafel Mix
- ¾ cup filtered water
- 1 head of fresh parsley
- 3 cloves of fresh garlic
- ¼ cup sprouted sunflower seeds
- ¼ cup OTOT Manzanillo Extra Virgin Olive Oil
Add water, peeled garlic, washed parsley leaves (a few stems included is fine!) and olive oil in a small Nutribullet cup. Blend until the ingredients are fully ground together into small bits. Add mixture to 1 cup of falafel mix in a medium bowl and stir together. Add a sprinkle of sea salt and a few grinds of black pepper and let sit, covered, for 30+ minutes. The ingredients will rise and absorb additional moisture. After a half-hour, scoop and roll into palm sized balls and place on a greased baking sheet (we grease ours with a thin smear of EVOO). Bake at 375 degrees for 25-30 minutes or until golden brown.
Raita Dip:
We love dipping our freshly made falafel into our favorite cucumber yogurt dip. Here’s an easy recipe which whips right up and makes a great dairy free option for the vegans in your life!
- 1 cucumber (peeled and sliced into small cubes)
- 1 small 5.2 oz container of SO Coconut unsweetened yogurt
- Splash of OTOT Manzanillo Extra Virgin Olive Oil
Add above ingredients into a small bowl, mix thoroughly, add salt & pepper to taste.
